Mexican Bean Salad

Throw together this salad for your next bbq, a packed lunch or just to enjoy in the sunshine.


  • 1 can black beans rinsed and drained
  • 1 small can corn rinsed and drained
  • 1 red paprika cubed
  • 2 tomatoes cubed
  • 1 red onion finely sliced, soaked in water
  • 10 grams parsley finely chopped
  • 10 grams coriander finely chopped
  • 75 grams rocket
  • 30 mL olive oil
  • 1 tsp Smokin Senorita
  • 1 lime juiced
  • salt and pepper to taste


  • Mix olive oil, lime juice and Smokin Senorita
  • Toss all ingredients together and dress with dressing.
  • Taste and adjust seasoning with salt and pepper.
