Black Bean Chili
This recipe is adapted from one posted by Bee Wilson on her Twitter account. I've adjusted the amounts and edited the spice so it's easily family friendly. You can adapt it to - use the root veg you already have. Change up the spices. Change up the beans! Spice yours up with Smokin' Senorita

Ingredients
- 30 mL neutral oil
- 1 onion finely diced
- 3 cloves garlic smashed
- 1 red paprika diced
- 1 tsp each coriander cumin & smoked paprika powder
- 2 tbs tomato paste
- 2 cups cooked black beans
- 2 sweet potato diced
- 1 carrot grated
- 1 can tomatoes smashed
- 1/2 cup additional lentils optional
- 500 mL or more water
to finish:
- Smokin' Señorita to taste
- Lime wedges
Instructions
- Cook onion over medium-low heat until translucent
- Add garlic and spices and mix well.
- Add tomato paste and cook, mixing for 30 seconds.
- Add carrot and sweet potato (and optional lentils). Mix well.
- Add tomatoes and water, mix.
- Cover with a lid and cook on low heat for 15 minutes.
- Add cooked beans, cook for 5 minutes.
- Season with salt.
- Cook another 5 minutes.
- Serve: on a baked potato; with rice; in a burrito, you choose! Spice it up with Smokin' Senorita
Notes
I bulk cook dried black beans in a pressure cooker. You can also use canned beans!
